So what i've noticed, if you capture a snorlax in pokemon sun/moon it'll have the dex number from that region of #36. But if you capture it from red/blue and trade it up it'll have it's correct dex number of #143. With this in mind, i'm going to playthrough EVERY pokemon game and capture all pokemon within each game (or trade them but make sure they're from that region) so at the end of it....not only will I have all the pokemon but they will all have their correct dex numbers (ocd I know).
This also gives me an excuse to play every single game = p
If i'm wrong and the pokemon dex numbers update in their description after the elite four or beating sun/moon, please let me know! As far as i'm concerned though even after you get the national dex in sun/moon, if you capture a gen 1 pokemon in gen 7, it'll will aways have gen 7's dex number.

I just realised, Gen 5 ruined it all when the pokemon restarted at 1 lol So when you trade it to sun/moon it must update the dex number. Sun & Moon also have NO national pokedex so the number is just blank if it's not in the alolan dex. THIS IS GETTING SERIOUS

Ok I HAVE CONFIRMATION, after talking with myself lol I transferred a caterpie from my virtual console blue (gen 1 = #10) to sun/moon (gen 7 = #17) and i can say the game CHANGES the dex number to match the alolan dex. This ONLY happens if the pokemon transferred is also in alola's regional dex.
So say you transfer a pokemon not found normally in alola to sun/moon, it'll just show a blank space where the dex number should be.
